I love summer foods, especially fresh crisp veggies (like peppers) and corn, yay corn! I love making this quick, easy and tasty salad
You will need:
2 cans of rinsed organic black beans
3 or 4 ears of cooked corn cut off the cob
2 chopped organic red peppers
2 minced garlic cloves
1/2 cup of chopped cilantro
2 tablespoons of oil (i like extra virgin olive)
Salt & Pepper to taste
Mix together and BOOM!
*some people like to add a teaspoon or 2 of sugar
Salad is great on its own, with avocado, in a wrap, with rice or any other way you can imagine
