I’m guilty of not eating enough veggies and I mostly always have been… WHAT!!!
Wait a second…. how is that possible? easy… carbs. I may have been a vegetarian since 12 but I’m pretty good at avoiding vegetables, at least I can be… Anyway here are 3 super important reasons why YOU should eat more veggies.
1 – For the vitamins: Veggies have all sorts of awesome vitamins. A, B, C, D, E, F… and on and on. Really though Vegetables are a super important source of many vitamins including potassium (helps to maintain healthy blood pressure) folate (helps the body from red blood cells) vitamin A (keeps eyes and skin healthy and helps to protect against infections) and vitamin C ( keeps teeth and gums healthy & aids in iron absorption)
2 – For the fiber….. Fiber is awesome! and is important for proper bowel function. Fiber also helps provide a feeling of fullness with fewer calories, yay for that! Some high fiber veggies include artichokes, parsnips, greens, brussel sprouts, fennel and turnips.
3 – For the disease fighting … vegetables are disease fighting warriors! Coniferous vegetables like kale, collard greens and broccoli are known to be serious cancer fighters, go veggies! Vegetables are alkalizing… Did you know that a highly acidic environment provides a field day for illness? Yeah… NOT good, so eating raw veggies, especially greens helps to balance acid and alkaline (this balance is what you want)
